It’s an old malt — Plumage Archer — which they used to use back in the early days but phased out for a while. They’ve reintroduced it again, and this batch is going to be unpeated, so I’m keeping things as traditional as possible to let the malt speak for itself. Since it’s a Distiller’s Special, I wanted to go for something a bit different — something that stands apart from what the others are doing. I’m aiming to mature it in a wine barrel, which is quite unusual for a whisky, and I’m curious to see what kind of flavours that brings out.
